thump is correct. They showed the run where Byars lost his shoe. Im pretty sure that was supposed to be Slater, so I guess for one episode at least Slater was played by Keith Byars

From what I can tell, we are recallling different episodes:
In episode "Cream for a Day", the footage they show of Bayside has Slater as number 3. Since Byars was number 41, it can't be the footage you are recalling. Unfortunately, the site where I found out Slater was number 3 doesn't state what teams are being used. I will claim this is the Ohio State-Minnesota footage I remember. Again, this makes since as everyone's faces turned Bayside's school color, maroon...the same color as Minnesota's.

The footage you are recalling is from the episode "Teacher-Student Week", where they do use footage from the Ohio State-Illinois game with Keith Byars (note, the link I am providing mistakes Illinois for Clemson).

The funniest episode is eaily Jessie getting hooked on caffeine pills. It has a terrible plot and an awful music video. That's gold... There's never been a worse/funnier moment in TV history than Jesse freaking out and singing "I'm so excited! I'm so excited!"
