Myself and three of my friends tackled one of these yesterday afternoon after it smoked for about four hours. Came out of the smoker picture perfect.

Yummy.

For BBQ aficionados, I highly recommend slathering this thing with Cherry Bomb. Good God Almighty the Cherry Bomb is delicious.

Ok here was my attempt:

The second pic is right after I prepped it. When I was spreading the sausage, it loosened my weave! Didn't seem to much matter in the end, though.

The third is about an hour and a half into smoking it. I converted a gas grill into some what of a smoker. It actually turned out very well once I figured out a way to rig the burners and such to get the hickory a good distance from them. Enough smoke, but not catching on fire (well it happened a few times, had a hose handy though).

The first is about 3 hours into it, right before I pulled it off. I impressed myself, if no one else. It was delicious and it is totally doable by anyone.

I just smoked 3 bags of chicken wings last weekend. It's amazing how everything tastes like bacon when you smoke it. I might have to tackle one of these at some point, but I've already done so much damage to my heart this might put me over the edge.
