Here are the rules in regards to the LDS mission.

There are no allowances for working out. However, sports are prohibited. It doesn't look like there is much personal time allowed.

That is likely a large reason why these athletes do not generally pan out once they get back (of course there are exceptions, see above). My friend just got through with his mission and was a top wrestler in the country but the transition back into the sport is going to be a long one. Not impossible but it makes it tough for sure.
