Texas bbq is primarily beef. they dont normally "slather" sauce on beef. Any of the chefs that made the dishes you referenced would appreciate the shit out of a great bbq'er. Its harder than you think and can be more delicious than you can imagine. I dont like sugary tomato based sauces btw...
